5 Idaho potatoes
2 eggs, slightly beaten
1 and 1/3 teaspoon salt
1 and 1/2 cup boiling water
2 tablespoons oil
1/8 teaspoon white pepper
Grate potatoes into eggs.
Add spices and boiling water and mix well.
Heat oil in 9×13 pan, greasing all sides of pan.
Pour mixture into baking pan. Bake for 1/2 hour at 500°F, then reduce heat to 450°F and bake for additional hour.

What does it mean when it says to heat the oil in the pan? Am I meant to pour the oil in and then place in the oven and then take out and add the kugel?
I would assume so.
Thank you! I made the kugel without heating the oil first and it came out delicious! I would next time double it in one pan though and try heating the oil first
very yummy for a low fat potato kugel. I would add a bit more salt next time and also put it in a half 9×13 pan instead to give it more height
For someone who has never seen an Idaho potato, please can you advise how much 5 Idaho potatoes approximately weigh, in order to substitute for a similar texture potato.
This was the most delicious potato kugel ever. It was not greasy, not peppery and just plain yummy. Also very easy to make.
