2-pound London broil
salt, to taste
pepper, to taste
1/2 teaspoon garlic powder
1/4 cup Tuscanini Olive Oil
1 red onion, finely chopped
1/2 pound shiitake mushrooms, sliced
1/2 cup beef broth (or water plus 1 tablespoon beef flavor soup mix)
1/4 cup dry red wine, such as Alfasi Cabernet Sauvignon
1 tablespoon Tuscanini Tomato Paste
Sauté onions and mushrooms in olive oil until soft. Add broth, wine and tomato paste. Simmer five to 10 minutes or until slightly thickened.
Brush steak with a little olive oil. Sprinkle with salt, pepper and garlic powder. Broil 12 to 15 minutes on each side.
Remove steak from oven. Cut into thin slices. Pour sauce over the meat.
