Loaded Coconut Oatmeal Cookies

Fun, wholesome and loaded with flavor! Yield: 30 cookies

Ingredients

Loaded Coconut Oatmeal Cookies

  • 1 cup oil (unrefined coconut oil works really well here)

  • 1/4 cup sugar

  • 3/4 cup Haddar Brown Sugar

  • 2 eggs

  • 1 and 1/2 teaspoons vanilla extract

  • 1 and 1/2 cups whole wheat flour such as Shibolim

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 and 1/2 cups oats (any type)

  • 3/4 cup unsweetened coconut flakes

  • 3/4 cup white chocolate chips

  • 3/4 cup Gefen Dried Cranberries (optional)

Directions

1.

Preheat oven to 350 degrees Fahrenheit. Line baking sheets with Gefen Parchment Paper.

2.

In a large mixing bowl, beat oil with sugars.

3.

Beat in eggs. Mix in remaining ingredients.

4.

Form into one-and-a-half-inch balls. Place on prepared baking sheets; flatten slightly.

5.

Bake for 10 to 12 minutes.
