What a boon! A terrific lighter version of a popular favorite, this creamy pasta dish is now guilt-free. (No heavy cream!)
oil, for sautéing
1 large onion, diced
2 and 1/2 tablespoons mushroom soup mix
1 cup milk
1 cup shredded cheese
12 ounces Tuscanini Fettucine or medium noodles, cooked and drained according to package instructions
1 box fresh mushrooms, sliced, or 1 (8-ounce/227-gram) can sliced mushrooms
Heat oil in a large frying pan. Sauté onion until golden.
Add mushrooms and sauté until they lightly brown and begin to shrink, another four to five minutes.
Lower flame and add soup mix to pan; mix gently to combine.
Add milk and bring to a low boil. Stir in cheese and mix until melted.
Add noodles and stir until pasta is well coated. Serve immediately.

Made this for Melave Malka was amazing. I didn’t have mushrooms or mushroom consommé in the house; I subbed the consommé for salt, spices(pepper, garlic, onion), & flour; also added 2 cubes frozen garlic & 1 parsley for extra taste. Was amazing!!!
I also made this with whole wheat penne if your trying to be healthier & was still great

What type of cheese? What type of shredded cheese? I used mozzarella and the sauce wasn’t smooth…

Missing Ingredient Is it missing the Mushrooms from ingredients?
Fettuccine historically has mushrooms, but they are optional. The stylist put them in the picture, but they are not in the recipe. That said, I would sautée some and add to sauces. Mushrooms definitely add depth of flavor without adding many calories.

In the instructions it says to sautee the mushrooms?
Is there anyway to make this ahead of time? For instance, can l prepare the pasta and sauce before and combine before serving? Can anything be made in advance and frozen?
Yes, you can definitely make in advance and combine before serving. You should be able to freeze the sauce, no problem.
