A Cali-style Chopped Salad…fresh, filling, and fabulous.
1 cup finely diced cucumbers (English)
1 cup finely diced red peppers
1 cup finely diced Gefen Hearts of Palm
1 cup finely diced carrots
1/2 cup finely diced Gefen Beets
1 cup chopped hard boiled eggs
3 avocados, roughly mashed
1/3 cup finely chopped shallots
1 cup Tuscanini Lemon Juice
1/4 cup prepared horseradish (ideally white), such as Manischewitz
1 teaspoon kosher salt
Mix all above ingredients and lightly mix dressing in.
