This light and tasty salad is easy to prepare and so refreshing.

Ingredients

Lemony Chickpea-Feta Salad

  • 3 and 1/2 tablespoons oil

  • 3 and 1/2 tablespoons Gefen Lemon Juice

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Directions

1.

Drain and rinse chickpeas.

2.

Pour into a bowl.

3.

Add feta cheese, red pepper, purple onion, and parsley and mix.

4.

Add oil, lemon juice, salt, and pepper and mix.
