Just the word lemon brings to mind the bright flavors that dessert should have, and this one is no exception. The rich, buttery crust up against the light, creamy and flavorful filling creates a luscious, airy, and lemony bite every time. Once you try it, no party will be complete without it!
2 cups Glicks Flour
1 cup (2 sticks) cold butter, cubed
1/2 cup sugar
1/2 teaspoon salt
8 ounces cream cheese, at room temperature
2 cups sugar
3/4 cup fresh lemon juice or Gefen Lemon Juice
6 eggs, at room temperature
1/4 cup Glicks Flour
1/3 cup powdered sugar, such as Gefen Confectioners’ Sugar (plus additional for topping)
1 teaspoon Gefen Vanilla
Preheat oven to 350 degrees Fahrenheit.
To make the crust, combine flour, butter, sugar, and salt in a food processor and pulse until the butter is broken down to pea-sized pieces. Press into a Gefen Parchment Paper-lined 9×13-inch baking dish and bake for 10 minutes.
While crust is baking, make the filling. Cream sugar and cream cheese with a hand mixer, then slowly add lemon juice, eggs, flour, confectioners’ sugar, and vanilla and mix until smooth. Pour batter into crust and bake for an additional hour. Let cool at room temperature for 20 minutes, then refrigerate for at least 4 hours or up to overnight before cutting into bars for serving. Sprinkle with powdered sugar before serving.
