If you’re looking for an easy, healthier, and refined-sugar-free cookie recipe for Pesach, these chocolate chip cookies stuffed with a “healthy” brownie are it!
Makes 4 large cookies
1/3 cup potato starch
1/2 cup Gefen Almond Flour
1/2 teaspoon baking powder
2 tablespoons honey
1 egg
1/4 teaspoon salt
1/3 cup Glicks Chocolate Chips
2 tablespoons Gefen Almond Butter
1 tablespoon cocoa powder
2 teaspoons honey
Glicks Chocolate Chips(optional)
Preheat oven to 350 degrees Fahrenheit.
Mix cookie ingredients together in a bowl and set aside.
In a different bowl, mix brownie ingredients together.
The consistency should be thick enough that you call roll the brownie into a ball. The ratio may change depending on the thickness of your almond butter. If you find it too liquidy, add some more cocoa powder. If it’s too thick, add some more almond butter and/or honey.
Take cookie dough, roll into a ball, and flatten slightly. Take some brownie batter and roll into a ball. Place the ball on top of the flattened cookie dough. Take some more cookie dough and cover the brownie part. The brownie should be completely surrounded by cookie dough.
Bake for 15 minutes.
