Kale Salad with Radish, Peach, and Red Onion

The sharpness of radishes and red onion pair wonderfully with the peach and balsamic dressing.

Ingredients

Salad

  • 5 cups greens (I used kale and arugula), chiffonade

  • 1/4 red onion, sliced very thin

  • 1 peach, sliced thin or matchsticks

  • handful of radishes, sliced thin

  • 1/2 cup walnuts

  • 1/4 cup golden raisins

  • sesame seeds, to garnish (optional)

  • dried dill, to garnish (optional)

Dressing

  • 1/4 cup white balsamic vinegar

  • about 2 tablespoons stevia

  • at least 1 teaspoon salt, to taste

Directions

Prepare the Salad

1.

Add salad ingredients to a large bowl.

Combine dressing ingredients, pour over, and serve.

Notes:

I like white balsamic in fruit salads; it’s a bit lighter than regular balsamic and has a floral kind of taste at the end. But if you don’t, regular balsamic or any acid (vinegar or lemon) works.
