Hardy kale, filling broccoli and sweet potato, and sharp radish come together to create a nourishing salad that will keep you satisfied and energized. Works well with barbecued proteins!
4-6 cups kale
1/2 teaspoon oil
1/2 – 1 cup broccoli and cauliflower
1 sweet potato
5 radishes, cut into wedges
1/2 cup whole almonds
1 cup edamame (optional)
pomegranate seeds
golden raisins
grilled peaches or pineapple
2 tablespoons oil
juice of 1 lemon (or about 3 tablespoons Heaven & Earth Lemon Juice)
2 tablespoons orange juice
1 teaspoon Haddar Dijon Mustard
1 teaspoon salt
1 tablespoon stevia
Preheat oven to 400 degrees Fahrenheit, or heat up the BBQ.
Massage kale with oil until softened
Bake or grill broccoli and cauliflower until slightly charred.
Cut sweet potato into cubes or sticks and bake or grill, covered, until softened. Uncover at end for 10 minutes.
If using edamame, roast until somewhat crunchy.
Combine all componants in a bowl. Sprinkle over sweet add-in of your choice if desired.

1 t dijon mustard
1 t salt
1 T stevia
