I love Jambalaya, and while this recipe is not completely authentic, it is full of delicious flavors!
1 tablespoon olive oil
1 onion, diced
1 package hot dogs (7–8 pieces), sliced into circles
1 orange pepper, diced
8 Shishito peppers, sliced
1 and 1/2 cups white rice
3 tablespoons Tuscanini Tomato Paste
1 teaspoon salt
1/2 teaspoon pepper
dash cayenne pepper
1 teaspoon garlic powder
1 teaspoon Gefen Onion Powder
1 teaspoon smoked paprika
1/2 teaspoon oregano
1/4 teaspoon thyme
3 cups Manischewitz Vegetable Broth
In a large, deep frying pan, heat oil over medium high heat. Add the onion and sauté until soft.
Add the hot dogs and cook until edges begin to brown.
Add the peppers. Sauté until soft.
Add the rice, tomato paste, and all spices. Mix together.
Add the vegetable broth.
Bring to a boil, cover, then simmer for 20 minutes.

Left out the shisito peppers and the cayenne as we do not like our food spicy. It came out perfect for my family.
