Prepare the Rice and Beans

1.

Set a large pot over medium high heat.

2.

Add oil and onion, salt and pepper.

3.

Cook, stirring often for about eight minutes until onion becomes translucent.

4.

Add beans, tomato paste and paprika. Stir for four to five minutes to allow tomato paste to slightly carmelize.

5.

Fill pot with enough water so that it rises about one inch above the beans. Bring pot to a boil, then cover the pot and reduce heat to low.

6.

Allow beans to simmer on low heat for one hour until beans are soft. Check pot every 20 minutes or so and if the beans seem dry or they absorbed all the water add more water 1/2 cup at a time.

7.

Serve hot, over rice with techina and spicy chug!

how much beans… i would love to make this recipe, but i had the same question as the others… how much beans??
Also, are white beans good?

Hi- we apologize it is a 16 oz bag of beans. Yes, you can also use white beans.

I used canned white beans and added frozen cilantro cubes to the sauce. So delicious and could not be easier!

AMAZING. Made it for my children and reserved some fore the next week when I would be making the minestrone soup but my kids, the pickiest eaters polished it clean. and even ate the beans iI saved .Thank you Danielle, for this awesome dinner!!

So easy! The recipe doesn’t say how much beans to use, so i just used abt a pound and it came out great! If your using regular ground pepper make sure to do much less than a tsp… it came out delicious!
