This is a total cheat board. There’s almost no recipe because you can use store-bought hummus. Cut up the veggies (I do Israeli style), add the feta, drizzle some olive oil and warm up the pita. The end. But because I love to make homemade hummus when I can, here is my cheat.
2 packages Tuscanini Chickpeas, drained
1 small container of store-bought pre-sautéed garlic (remember: shortcuts)
1/2 cup pre-made techina
Heaven & Earth Lemon Juice, to taste
salt
pepper
pita bread
Heaven & Earth Falafel (optional)
chopped fresh veggies
fried eggplant
Throw everything into a blender and serve.
