These skewers present beautifully! Reserve some marinade (before adding the chicken) to drizzle over the plates before serving. Yield: 4 long skewers
1/4 cup Gefen Honey
1/4 cup Glicks Ketchup
3 tablespoons brown sugar
2 tablespoons soy sauce
1 cube Gefen Frozen Garlic
1/2 pound chicken breast, cut into 1-inch cubes
1 red pepper, cut into 1-inch cubes
1 red onion, cut into large chunks
In a bowl, combine honey, brown sugar, soy sauce, and garlic. Marinate chicken cubes in the sauce for one hour.
While chicken is marinating, soak skewers in water to prevent them from burning.
Thread chicken, pepper, and onion onto skewers and balance them over the sides of a foil pan so that the chicken is not touching the bottom of the pan.
Bake at 400 degrees Fahrenheit for 22 minutes. For added flavor, baste chicken with leftover marinade halfway through baking.
