An all-yellow, sweet and tangy tzimmes made with carrots, onion, dried apricots, honey and orange juice.
2 tbsp olive oil
1 medium onion, chopped
16 oz baby carrots
10 dried apricots, chopped
1/2 cup orange juice
2 tbsp honey
salt to taste
Heat olive oil in a medium saucepan over medium-high heat. Add chopped onions and saute until beginning to brown.
Add baby carrots, saute 2 more minutes.
Add chopped apricots, orange juice, honey, and salt to taste. Bring to a simmer.
Cover and simmer over medium-low heat for 45 minutes, stirring occasionally.
