Honey-Garlic Chicken Noodle Stir-Fry

With sheet pans being all the rage for their ease of serving a well-balanced meal while dirtying as few pots and pans as possible, I thought I’d play on that concept and serve a full meal in one pot.      A Food Fight, Round 1 Recipe

Ingredients

Chicken

  • 1/4 cup flour

  • salt and pepper, to taste

  • 2 pounds (1 kilogram) chicken breasts, pounded thin

  • 4 tablespoons oil, divided

  • 1/2 red onion, thinly sliced

  • 1 red pepper, thinly sliced

  • 1 small zucchini, cut into matchsticks

  • 1 cup julienned carrots

  • 1 (9-ounce/225-gram) package Gefen Japanese-Style Noodles

  • 1 yellow pepper, thinly sliced

Directions

Make the Stir-Fry

1.

Season flour with salt and pepper and dredge the chicken in it. Pan-fry in three tablespoons oil until browned on all sides. Transfer chicken to a bowl and set aside.

2.

Add one tablespoon oil to the pan and add all the sliced veggies. Saute until cooked but still firm. Season with salt and pepper and set aside.

3.

In a small saucepan, bring the first six sauce ingredients to a boil. Dissolve cornstarch in water and add to pot. Stir continually until sauce thickens.

4.

Return the chicken to the pan. Pour one half to three-quarters of the honey-garlic sauce on top and cook until chicken is well coated.

5.

Prepare Gefen noodles according to package instructions. Toss noodles with remaining sauce.

6.

Arrange noodles on a platter. Top with sauteed vegetables and then chicken.

An absolute winner. It came together quickly! A must for a weeknight meal. I followed the directions basically as printed. It’s going to be added to our rotation.

spices if i want to use fresh garlic and ginger how much ginger is cube and how much garlic is 5 cubes?

Each cube of garlic is a clove while each cube of ginger is a teaspoon.
