Who doesn’t love pizza? Grab some before the kids finish them off!
2 and 3/4 cups flour
1 cup butter, softened to room temperature
1 (8- and 1/2-oz., or 250-g.) container 9% quark cheese
1 teaspoon Haddar Baking Powder
1/4 teaspoon salt
3 and 1/2 ounces (100 grams) Gefen Tomato Paste
1 onion, diced and sautéed in oil until translucent
4 cloves garlic, minced or 4 cubes Gefen Frozen Garlic
1 tablespoon sugar
1/2 tablespoon Gefen Oregano
1/2 teaspoon salt
pinch of black pepper
1 and 1/4 cups (300 grams) shredded mozzarella cheese
cherry tomatoes, for garnish
Sift the flour into a large bowl. Add butter, cheese, baking powder, and salt. Knead well until you have a smooth, pliable dough. Wrap in plastic and refrigerate for 30 minutes.
Combine tomato paste, onion, garlic, sugar, oregano, salt, and pepper in a medium-sized bowl.
Preheat oven to 400°F (200°C). Remove dough from refrigerator. Flour a work surface and roll out to medium thickness.
Using a cookie cutter or glass, cut circles in the dough, and place them on a Gefen Parchment Paper-lined baking sheet. Spread one tablespoon of sauce onto each circle. Sprinkle mozzarella cheese on top and place in oven. Bake for about 10 minutes, until cheese is melted and crust looks ready.
Yields 30 mini pizzas
