Some time ago, I took my kids out for supper on the occasion of one of their birthdays. One of them ordered home fries, which I never heard of before. Well, it ended up being the most popular dish of the evening. My daughter Malka and I decided that we had to figure out how it was made. After a little trial and error we came up with this version, which is out of this world, and in my humble opinion better than the restaurant’s! Whenever you make it, double the recipe, because you’ll want to eat the whole thing yourself!
1 large onion, sliced in thin half-circles
4 tablespoons (50 grams) butter
5 potatoes
3/4 cup chili sauce
salt and pepper, to taste
pinch of sugar
1 (8-ounce or 235 milliliters) container heavy cream
mozzarella cheese (optional)
In a large skillet, melt butter.
Add onion and sauté until soft and golden.
Add the chili sauce, seasoning, and cream. Bring to a boil.
Lower flame and simmer for one to two minutes until well combined. Set aside.
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Scrub potatoes and microwave on high for 10 minutes or until soft.
Cube and place in a medium-sized rectangular pan. Pour sauce over potatoes, and mix all together until well coated.
Bake for 20 minutes uncovered, stirring occasionally.
Sprinkle with mozzarella cheese, if desired, and place under grill for five to seven minutes until crispy and just getting brown. Serve hot.
