Hearts of palm spaghetti is a fantastic low-carb substitute for regular wheat pasta. The hearts of palm “noodles” have a firm but tender texture and a mild flavor, and they will absorb plenty of the lemon vinaigrette in this salad. Don’t skip the basil. It can be a pain to wash and check, but here, you only need a little bit and it adds a lot. This recipe is a salad or side dish that is suitable for Gluten Free, Paleo, Low Carb, and Keto diets. 1 (14-ounce) can Gefen Hearts of Palm Spaghetti, washed and drained
1/2 English cucumber, julienned
1 cup colorful cherry tomatoes, halved
2 ripe avocados (but still firm), diced
5 basil leaves, chopped
3 tablespoons olive oil
2 tablespoons Heaven & Earth Lemon Juice
1 clove garlic, crushed or 1 cube Gefen Frozen Garlic
1/2 teaspoon salt
1/4 teaspoon Haddar Dijon Mustard
In a large bowl, combine Gefen Hearts of Palm Spaghetti, cucumber, tomatoes, avocado, and fresh basil.
Whisk together dressing ingredients and toss with salad. Enjoy!
