Pesach is behind us, the spring weather is starting to peek out, and it’s that time of year when we start to think about getting back on track with some healthy eating. I think “healthy muffins” is a bit of a misnomer, so I’d prefer to call these “healthy-ish muffins.” They’re made with whole wheat flour and all-natural sugar. They’re also soft and fluffy and packed full of flavor for a perfect grab-and-go breakfast or snack.
1 and 3/4 cups Shibolim White Whole Wheat Flour
1 and 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup oil
2 eggs
1/3 cup Gefen Maple Syrup (or honey)
1/2 cup almond milk
1/2 cup Gefen Applesauce (plain or flavored)
1 teaspoon vanilla extract
1 apple, grated
granola, for sprinkling
Preheat oven to 425 degrees Fahrenheit (220 degrees Celsius). Grease a muffin pan or line with paper cups.
In a large bowl, whisk together all dry ingredients.
In a second bowl, whisk eggs, oil, and remaining wet ingredients. Add grated apple.
Fold wet ingredients into dry and mix gently until combined.
Fill muffin cups three quarters of the way and top with a sprinkle of granola.
Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
Allow muffins to cool and enjoy!
