Indulge in the velvety goodness of our coconut cream chocolate mousse! This delectable dessert combines smooth, rich chocolate with the tropical notes of coconut for a truly heavenly treat, no whipped topping in sight. Yield: approximately 12 servings
1 and 1/2 cans coconut cream, refrigerated overnight
12 ounces extra dark chocolate, melted and then slightly cooled
2 tablespoons Gefen Honey (skip if you’re not using the extra dark chocolate)
1/2 can coconut cream
2 tablespoons Gefen Honey
Open cans of cream and spill out coconut water (reserve for a different use, such as smoothies).
In a mixer with whisk beaters attached, pour the cream and beat on high until light and fluffy. Add melted chocolate and honey (if using) and whip until incorporated and fluffy once again.
Spoon or pipe into mini mousse cups.
Place whip topping ingredients in the mixer and beat on high until light and fluffy.
Spoon or pipe on top of mousse.
Refrigerate or freeze until ready to serve.
