My daughter and I developed these cookies a while ago, when I was looking for a way to sneak some healthier ingredients into my family’s diet.
3 cups old-fashioned rolled oats
1 cup + 2 tablespoons flour or Shibolim White Spelt Flour
1/2 cup toasted wheat germ
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
1 cup oil (Gefen Light Olive or canola)
1 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 and 1/2 cups Gefen Mini Chocolate Chips or 72% chocolate chunks (my preference)
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Place all ingredients except chocolate chips into the bowl of a mixer fitted with a paddle attachment, in the order listed. Mix just until combined.
Add chocolate chips and mix a bit more.
Use an ice cream scoop to form cookies and place onto a baking sheet lined with Gefen Parchment Paper, about two inches (five centimeters) apart.
Bake until golden and set, about 14 minutes. Allow to cool and enjoy.
Yields 36 cookies

Can I use maple syrup instead of sugar?
Hi Raizel,
That’s a great way to make these even healthier!
You definitely can, you may just need to tweak the recipe a bit to get it just right. I would do 3/4 maple syrup for 1 cup of sugar, and since maple syrup is more liquidy, I may lessen the oil a little.
Let us know how it turns out!

can i skip the wheat germ?
Yes- you can also sub it out with oat bran, rice bran or ground flaxseeds
I didn’t have wheat germ so I used flax seeds and I didn’t even bother grinding it still came out very good
I used ground flaxseed, it came out amazing!!!
Chewy and delicious
Wheat germ substitute I just looked it up and you can use half day whole wheat flour + 1/4tsp Honey
Great- thanks for the tip!
Alternative Any Other alternative instead of wheat germ? I’m not going to be able to get it now
Wheat bran, oat bran, and ground flaxseed are all good substitutes.
