Tapenade is usually thought of as an olive paste, but can be made from other ingredients as well. This is a low-acid spread to enjoy on toast, wraps, or tossed into a salad as a dressing.
12 Gefen Black Olives, drained
1 ripe Hass avocado, pitted and scooped
1 teaspoon finely chopped fresh cilantro
1 slice toasted whole-grain bread
1/3 cucumber, peeled, seeded (if desired), and finely chopped
handful of arugula
In a food processor, combine the olives, avocado, and cilantro and pulse until smooth. Spread the tapenade on the whole-grain toast, top with the cucumber and arugula, and serve.
