This chicken is dedicated to my sister Miriam. As simple as it is, she convinced me that I have to include it here after she came over to steal the leftovers from my fridge. I serve this grilled chicken so there’s a healthy protein on the table for those who prefer something leaner.
2 and 1/2 pounds boneless chicken cutlets
1 large (16-ounce) bag baby peppers, tops and seeds removed
1 tablespoon Gefen Garlic Powder
2 packets Good Seasons Italian Dressing Mix
Bartenura Olive Oil, enough to coat
Montreal steak seasoning to taste
salt, to taste
Place chicken and peppers on a large baking sheet. Sprinkle garlic powder and Good Seasons Dressing Mix on top. Add olive oil to coat. Season with Montreal steak seasoning and additional salt if desired. Mix well to coat chicken and peppers.
Preheat grill to medium.
Place chicken and peppers on the grill. Grill 3 minutes on each side. Chicken can be made the day before and refrigerated.
