My family absolutely loves a barbecue. As soon as the weather turns warm it’s a pretty much given that we’ll be enjoying something from the grill each Sunday evening. Love a sweet sauce on your barbecued meat but don’t want something commercial that’s full of fructose? Here’s a fresh and healthy alternative. This sweet and savory sauce is a tongue-pleaser.
1 and 1/2 pounds boneless chicken thighs or breasts, cut into 1 and 1/2-inch nuggets
1/4 cup Baron Herzog Chenin Blanc or other dry white wine
1 tablespoon Gefen Olive Oil
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
1 teaspoon dried thyme
1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon Gefen Olive Oil
1 medium Vidalia onion, finely diced
1 tablespoon Tuscanini Apple Cider Vinegar
2 tablespoons no-sugar-added raspberry jam
1 and 1/2 cups blueberries
1/2 mango, diced
In a medium bowl, combine white wine, olive oil, garlic, thyme, salt, and pepper. Add chicken nuggets and let marinate in the refrigerator for one hour.
Preheat grill. Remove chicken pieces from the marinade, reserving the marinade. Thread the chicken onto skewers. Grill for 10 minutes, turning the skewers halfway through.
Meanwhile, prepare the sauce. Heat olive oil in a sauté pan over medium heat. Add onion and sauté until soft and translucent, about five to eight minutes. Add the reserved marinade, apple cider vinegar, raspberry jam, and blueberries. Bring to a simmer. Let simmer over low heat for 15 minutes. Add diced mango and simmer for an additional five minutes.
Plate the chicken skewers. Drizzle the sauce over the chicken. Serve warm.

Loved the fruit sauce but a little to sharp. The fruit sauce was great. kids loved the mango and blueberries with their schnitzel. A new fun twist to their weekly grilled chicken. Its the first time we used the spice Thyme. we didnt realise it had a sharp taste. The kids had to keep drinking water in between their spoons. Would definatly do it again with less thyme. It could be we left it in the marinade for too long. we did it in morning and only grilled it 6 hours later.
