These mocha chocolate muffins are so rich with flavor and delicious but are packed with nutritious ingredients, and they won’t spike your blood sugar! Plus, they’re gluten free and refined sugar free, making them the perfect mid-morning snack.
2 cups Gefen Almond Flour
1/4 cup coconut flour
1/4 to 1/2 cup coconut sugar
1/3 cup Gefen Cocoa Powder
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 cup (120 grams) butter, melted
3 eggs
1 teaspoon Gefen Vanilla Extract
2/3 cup strongly brewed coffee or espresso
1/3 cup sugar-free chocolate chips or dark chocolate bar chopped up into chunks
Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
Mix almond flour, coconut flour, coconut sugar, cocoa powder, baking powder, and salt in a bowl.
Add melted butter, eggs, vanilla, coffee, and mix.
Stir in chocolate chips.
Bake for 25 minutes or until cooked through.
