Homemade ice cream sandwiches made with graham crackers. This recipe uses non-dairy whipped topping, but you could substitute heavy cream if you prefer.
1 container non-dairy whip topping like Rich’s
1 package vanilla pudding mix
6 sheets graham cracker cookies
sprinkles
Whip up the whipped topping, then beat in the vanilla pudding.
Break graham crackers in half and lay on a work surface.
Spread whipped topping over each half of the graham crackers. Top with the remaining graham crackers to create a sandwich.
Dip edges of the sandwich in sprinkles to decorate.
Freeze.
