My mother loves to snack on corn nuts. She even mentioned that she’s tossed them into a salad on occasion and maybe I should try it out…. Well, mothers are always right!! I tried it out and loved the crunch it added to this awesome salad. This one’s for you, Ema!

Ingredients

Salad

  • 1 (8-ounce/227-gram) bag romaine lettuce

  • 1/3 pound dried, hard salami, thinly sliced in circles

  • 1 red onion, sliced thinly

  • 1 avocado, cubed

  • 1 cup barbecue corn nuts (or a spicy flavor)

  • 1 cup grape tomatoes, sliced in half

Dressing

Directions

1.

Blend all dressing ingredients together.

2.

Neatly layer salad ingredients in a large bowl.

3.

Pour dressing over salad and toss well.

Real good salad made it with homemade jerky instead of salami and really delish
