This salad is a great way to help your attempts at trying to maintain a balanced diet despite all the matzo and meals we eat every day all Yom Tov long. The creamy avocados and toasted pecans give this salad an amazing texture; need I mention that it looks beautiful on the plate too?

Ingredients

Salad

  • 3 heads romaine lettuce (without outermost leaves), sliced thinly

  • 1 green apple, thinly sliced

  • 1 kohlrabi, thinly sliced

  • 2 cucumbers, thinly sliced diagonally

  • 1 avocado, cubed

  • 1/4 cup toasted pecans, chopped roughly

Directions

Prepare the Go Green Salad

1.

Toss lettuce, apple, kohlrabi, cucumbers and avocado in a large bowl.

2.

Combine wine, lemon juice, sugar, oil and mayonnaise in a separate container. Shake or stir until fully combined, then pour over salad. Top with pecans.
