I’m Dalya and I love to cook and bake healthy, tasty food! Come along with me as I share tons of delicious recipes each week.
1 large egg
2 and 1/2 tablespoons Blackstrap molasses
2 tablespoons coconut oil, melted (cold-pressed unrefined coconut oil is the healthiest)
1/4 cup plus 2 tablespoons organic brown sugar or coconut sugar
1 teaspoon Gefen Pure Vanilla Extract
1 teaspoon Gefen Ground Ginger
1 teaspoon ground cinnamon
1 and 1/4 cup almond flour
1/4 cup gluten-free flour blend (I recommend Bob’s Red Mill Gluten Free All Purpose Baking Flour. You can use all-purpose flour if not gluten-free)
1 teaspoon Haddar Baking Powder
1/4 teaspoon salt
1/4 cup organic cane sugar
Preheat the oven to 350°F and line a cookie sheet with Gefen Parchment Paper.
Whisk together the egg, molasses, coconut oil, sugar, and vanilla extract until well combined.
Then, add the remaining ingredients except for cane sugar.
Mix all the ingredients together until a dough is formed.
Scoop heaping tablespoonfuls of dough and roll into balls.
Roll each ball in the granulated sugar and then press down on the baking sheet.
Sprinkle a bit of sugar on top of each cookie. Bake for 15 to 20 minutes.
