These healthier chocolate chip sticks are the perfect treat to have around during the Yomim Tovim and all winter long. They pair perfectly with a hot cup of tea on a chilly Sukkos night. No need for any fancy machines- these can be mixed by hand. When working with the dough, use either gloves or slightly wet your hands. WARNING: your whole family will love them, plan accordingly! This recipe makes approximately 24.
1/4 cup extra virgin olive oil or avocado oil
1/2 cup coconut sugar
1 egg
1 teaspoon vanilla extract
1 cup Gefen Almond Flour
1/2 cup coconut flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup Glicks Chocolate Chips
1/4 cup dried cranberries (no added sugar)
1/4 cup Glicks Chocolate Chips
1/4 cup pecan pieces
1 tablespoon Gefen Almond Butter
1 tablespoon Gefen Maple Syrup
1/4 teaspoon cinnamon
drops of water- until you get desired consistency
Preheat oven to 350 degrees Fahrenheit.
Combine oil and sugar and mix well.
Add vanilla and egg, mix.
Combine flours, baking powder, and salt. Add to egg mixture and mix until dough forms- best to use gloves or wet hands when working with your dough.
Divide your dough in two. To half of the dough, add chocolate chips and craisins and mix. To the other half, add your chocolate chips and pecans and mix.
On a baking sheet lined with Gefen Parchment Paper, form the dough into two logs.
Bake at 350 degrees Fahrenheit for 20 minutes.
Prepare your caramel drizzle for the chocolate pecan sticks. I like to pipe it on using a sandwich bag with a small hole by the tip.
Let loaves cool completely and then slice.
Drizzle chocolate pecan sticks with “caramel” sauce.
