This cake has the perfect moist texture and sweet taste. Kids in my family really like it. The recipe is quick and easy and the outcome is delicious.

Ingredients

Gluten-Free Carrot Cake

  • 1 cup grated carrot (2-3 medium carrots)

  • 2 cups Gefen Ground Almonds (almond meal)

  • 1/2 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 2 eggs

Directions

1.

Set the oven to 160 degrees Celsius / 325 degrees Fahrenheit with the fan. Grease a loaf pan.

2.

Peel and grate the carrots.

3.

In a mixing bowl, place all ingredients.

4.

Mix well to a unified batter.

5.

Pour the batter into the greased baking pan.

6.

Bake for 30 minutes.

7.

Cool the cake at room temperature.

Can I use almond flour or will it be too fine?
