This cake has the perfect moist texture and sweet taste. Kids in my family really like it. The recipe is quick and easy and the outcome is delicious.
1 cup grated carrot (2-3 medium carrots)
2 cups Gefen Ground Almonds (almond meal)
1/2 teaspoon baking soda
1 teaspoon cinnamon
2 eggs
1/4 cup melted coconut oil
1 teaspoon Gefen Vanilla Extract or vanilla paste
1/3 cup Gefen Maple Syrup
Set the oven to 160 degrees Celsius / 325 degrees Fahrenheit with the fan. Grease a loaf pan.
Peel and grate the carrots.
In a mixing bowl, place all ingredients.
Mix well to a unified batter.
Pour the batter into the greased baking pan.
Bake for 30 minutes.
Cool the cake at room temperature.
