This creamy garlicky sauce is an easy way to liven up your standard, same-old pasta dish.

1 pound Tuscanini Pasta
1 teaspoon salt
black pepper, to taste
6 large cloves of garlic, finely chopped
1/4 cup Gefen Olive Oil
1/2 cup fresh chopped parsley
1/2 cup sour cream
1/4 cup grated mozzarella cheese
2 tablespoons grated Parmesan cheese
Bring salted water to a rolling boil and add dry pasta. Cook according to taste – some people like it softer.
While pasta cooks, brown garlic in olive oil until golden.
Drain pasta, reserving 1/4 cup of pasta water.
Stir in olive oil and garlic, sour cream, cheeses, parsley.
Salt and pepper to taste. Add a bit of pasta water to make sauce creamy. Serve warm.

I made this recipe because I had sour cream that I wanted to use up.
I love sour cream, but it didn’t work for me in this recipe. I found it tasted just too sour; I’m not used to that in a creamy sauce.
I didn’t have parmesan cheese or fresh parsley (I used dried basil) so I’m not sure whether that affected anything.
