It’s hard to find healthy, filling snacks that are nut free to send to school. I simply leave out the pecans if these are going in a lunch box. With all these amazingly healthy ingredients, I’m happy when I can send one to school for a snack. It’s certainly better than onion rings, right?
2 and 1/4 cups flour
1/4 cup wheat bran, or oat bran
2 teaspoons Haddar Baking Powder
2 teaspoons cinnamon
pinch salt
4 eggs
3/4 cup oil
1 cup sugar
2 teaspoons Gefen Vanilla Extract
1/4 cup orange juice
1 cup carrots, grated
1 cup apples, grated
1/2 cup Glicks Chocolate Chips
1/2 cup chopped pecans
2 tablespoons flaked coconut (optional)
3 tablespoons flour
1 tablespoon sugar
2 tablespoons whole rolled oats
1 tablespoon pumpkin seeds
1 tablespoon plus 1 teaspoon oil
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Mix all the muffin ingredients together in a large bowl (do not overmix).
Spoon into lined muffin tin.
Combine topping ingredients in a separate bowl and scatter generously over muffins.
Bake for 25 minutes.

Substitution Can I use whole wheat flour?
What can I substitute for wheat bran or oat bran? Will finely blended oatmeal work?
All those options sound very viable!
