These fried fruit fritters are a healthier donut alternative and a perfect dessert for Shabbos Chanukah, or if you want to be elegant, for your family Chanukah party. Easy enough to make as a simple, warm winter treat, but sophisticated enough to serve as a gorgeous dessert.
With homemade berry jam, an overwhelmingly fresh taste, and almond crumble, it’s a winner.
oil, for frying
3 apples, cored and sliced into rings
1 pineapple, peeled, cored, and sliced into rings
1 bottle frozen pancake batter, defrosted
1/2 cup sugar
1 teaspoon Gefen Cinnamon
2 (12-ounce) bags frozen mixed berries
1 cup sugar
1/2 cup berry jam, such as Tuscanini
1/4 cup Gefen Lemon Juice
1 cup old-fashioned oats
3/4 cup Shibolim White Whole Wheat Flour
1/4 cup light brown sugar, packed
1/2 cup honey-glazed slivered almonds
1 teaspoon Gefen Cinnamon
1/4 teaspoon salt
1 stick cold margarine, cubed
Heat the oil in a medium saucepan.
Dip both sides of the fruit into the pancake batter and fry for 30 seconds per side.
Combine the sugar and cinnamon and toss each fruit ring into the sugar-cinnamon mixture. Set aside.
Place the mixed berries, sugar, jam, and lemon juice into a pot and bring to a boil. Lower the heat.
Using a fork or potato masher, slightly mash the berries.
Leave to cook on a low flame, stirring occasionally. (The berries will break down on their own.) Cook for 45–60 minutes or until the mixture has thickened.
Combine all ingredients and place on a Gefen Parchment Paper-lined cookie sheet.
Bake for 10 minutes at 350 degrees Fahrenheit, stirring halfway.
Place the fruit fritters on a plate, top with a dollop of homemade berry jam, and sprinkle with crumble.
