For true fruit lovers, here is a satisfying recipe for homemade fruit filling with apples, prunes, and apricots. You can use it to fill puff pastry pockets as shown, to fill a tart or pie, or in a trifle.
2 and 1/2 packages ready puff pastry, such as Gefen Puff Pastry
2 cups pitted prunes
4 cups dried apricots
4 yellow delicious apples
3 cups Kedem Apple Juice
4 teaspoons flour
2 teaspoons Gefen Cinnamon
1 cup sugar
Coarsely chop fruits. Combine with apple juice and cook over medium heat for approximately 15 minutes, mixing occasionally. Cool to room temperature and add flour, cinnamon and sugar. Mix well.
Roll out dough to 1/8-inch thickness. Cut into three- and- a- half-inch squares.
Place 1 heaping tablespoon of filling onto each square. Bring all four edges toward center. Pinch to seal.
Bake at 400 degrees Fahrenheit for five minutes. Reduce heat to 350 degrees Fahrenheit and bake an additional 25 minutes or until golden in color.
Sprinkle with confection sugar prior to serving.
