Thin and crunchy, these crisps will disappear faster than you can make them! They are easily customizable; you can use any assortment of nuts, dried fruits, and seeds.
Yield: approximately 4 dozen crackers
1 cup all-purpose flour, such as Glicks
1 cup unsalted mixed nuts
3/4 cup golden raisins or Gefen Dried Cranberries
1/4 cup unsalted pepitas or flax seeds
1/4 cup brown sugar, packed
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup soy milk or Gefen Almond Milk
Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan.
In a large bowl, stir flour, nuts, dried fruits, seeds, brown sugar, salt, and baking soda. Stir in the milk. Pour mixture evenly into the greased loaf pan.
Bake for 50 minutes, until golden brown. Cool completely in the pan before transferring to the freezer for one hour.
Heat oven to 400 degrees Fahrenheit. Remove the loaf from the pan. Using a serrated knife, cut into 1/8-inch slices. Arrange slices in a single layer on a rimmed baking sheet.
Bake for 15 to 20 minutes, until golden brown, flipping halfway through baking.
Transfer to a cooling rack to cool completely.
Store at room temperature in a container for up to one week.
