I know: Fried pickles are not a basic food. But it doesn’t hurt to include something exotic for those who want to experiment with an out-of-the-box delicious idea. These are fried, savory, and have the perfect inner crunch. Pair it with great dipping sauces for the full effect. Think it’s too weird? Don’t knock it until you try it!
Yields 20 pickle slices
20 slices Gefen Dill Pickles (or pre-sliced- see note)
2 cups Gefen Panko Crumbs
1 cup flour
1 cup milk (for a pareve version, use Gefen Oat or almond)
1 teaspoon baking powder
1 egg
1 teaspoon paprika
1/2 teaspoon black pepper
oil, for frying
Slice the pickles, if needed.
Preheat oil to 360 to 370 degrees Fahrenheit (a bit more than medium heat).
Combine flour, milk, baking powder, egg, paprika, and black pepper and stir until smooth. Allow the batter to sit for five minutes.
Meanwhile, dab the pickle slices dry with paper towels.
Dip the pickle slices in batter and then in panko crumbs. (Work with half a cup of panko crumbs at a time so you can replace it with fresh crumbs when it gets all sticky from the batter.)
Fry for four to five minutes until brown and crispy.
