Fish crudo for the win – because warmer temperatures means lighter foods. The success of a good crudo is the fusion of fresh and high quality ingredients. Tuscanini Extra Light Olive Oil is perfect to finish off this fluke crudo without overpowering all the existing flavors.
1 pound skinless fillet sushi grade fluke (sliced 1/4 inch thick)
4 radishes, thinly sliced
8 kumquats, thinly sliced
1 red chile, thinly sliced
1/4 cup watercress
3 sprigs fresh thyme
1/4 cup Tuscanini Extra Light Olive Oil
2 teaspoons Haddar Kosher Salt
Place the fluke in the center of your serving plate.
Top with the radishes, kumquats, and chile. Drizzle Tuscanini Extra Light Olive Oil.
Garnish with watercress and fresh thyme. Sprinkle with kosher salt. Serve immediately.
