Fluffy Blueberry Muffins (Passover)

Ingredients

Fluffy Blueberry Muffins

  • 1/4 cup oil

  • 1/3 cup honey

  • 2 ripe bananas

  • 3/4 cup almond flour

  • 3/4 cup potato starch

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 egg

  • 1 cup frozen blueberries  (no need to defrost)

Directions

1.

Preheat the oven to 350 degrees Fahrenheit. Grease the wells of a muffin tin.

2.

Mix ingredients, aside from blueberries, together. Gently fold in the blueberries. Fill muffin tins with the batter.

3.

Bake for 20 to 25 minutes.
