Borekas are the classic Israeli grab-and-go food. The Israel Day Parade and Shavuot are a week apart this year, and these goodies are on the menu for both events. Prepping ahead is key, and these can be made and frozen before the big meal.
1 cup Ta’amti Feta
2 eggs
1/2 cup Gefen Green Olives
salt, to taste
pepper, to taste
1 egg, for egg wash
sesame seeds, for sprinkling
Crumble feta and mix with eggs in a medium mixing bowl. Chop olives and add to feta mixture. Season with salt and pepper.
To fill borekas: Lay puff pastry squares on a piece of Gefen Parchment Paper. Using a teaspoon, place a spoonful of feta mixture in the center of each puff pastry square. Form a triangle and pinch to seal. Use a fork to crimp.
Place on a parchment lined baking sheet. Beat egg and brush each boreka. Sprinkle with sesame seeds.
Bake at 425 degrees Fahrenheit for 15–18 minutes, or until golden.
