This trilayered, tricolored vegetable kugel is an eye-catching side dish for your special occasion. It’s meant to serve a crowd, so feel free to reduce the amounts to suit your needs. Yield: 60 servings
4 pounds carrots, cooked, drained and mashed
4 pounds broccoli, cooked, drained, and mashed
4 pounds frozen cauliflower, cooked, drained and mashed
6 tablespoons oil
8 eggs
1/2 cup Gefen Mayonnaise
2 tablespoons onion soup mix
6 tablespoons Mishpacha Flour
2 teaspoons salt
1 and 1/2 cups non-dairy creamer
Gefen Cornflakes Crumbs, for sprinkling
Prepare carrot mixture. Divide into two 10- x 16-inch pans. Bake 15 minutes at 350 degrees Fahrenheit.
Prepare broccoli mixture. Pour over carrots and bake for 15 minutes.
Prepare cauliflower mixture, spread over broccoli mixture.
Sprinkle cornflakes crumbs and bake for additional 45 minutes.
Cut into one-and-half- by three-inch rectangles.
