Fennel Slaw

Ingredients

Salad

  • 1 fennel bulb, thinly sliced or shaved

  • 1 red onion, very thinly sliced

  • 1 cup julienned radishes

  • 1 firm crisp apple, unpeeled and thinly sliced

Dressing

Directions

Make the Salad

1.

In a large serving bowl, gently toss together the fennel, onion, radishes and apple.

2.

In a separate small bowl, whisk together vinegar, tarragon, lemon juice, honey, salt and pepper.

3.

Gradually whisk in oil in a thin stream until dressing is emulsified. Pour over slaw, tossing gently until well coated.
