This one is really popular in my house. These muffins are light and moist, have no sugar, tons of flavor. Oat bran is even lower in calories than oatmeal. It is sold with the hot cereals in the breakfast aisle. Its texture is similar to farina and many people cook it in a pot just like any hot cereal. It tastes like oatmeal and is extremely filling. Turning it into a muffin makes it a great on-the-go option. I keep them stocked in my freezer and the kids pull them out when they’re on the way out.
3/4 cup Haddar Applesauce
1/2 cup honey
1/4 cup oil
1 egg
1 teaspoon vanilla extract
1 cup oat bran
2/3 cup Shibolim Whole Wheat Flour
1 teaspoon cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 bag Gefen Mini Chocolate Chips or other mini chocolate chips (I use sugar-free)
Preheat oven to 350 degrees Fahrenheit. Spray muffin holders with non-stick baking spray.
In a mixer, combine applesauce, honey, oil, egg, and vanilla. Mix well.
Add oat bran, flour, cinnamon, baking powder, and baking soda. Mix well again. Add chocolate chips.
Pour into muffin tins. Bake for 22 to 25 minutes. Toothpick should come out clean.
Yields 10–12 muffins

I’m obsessed. Fantastic recipe.
Great recipe for what it is- quite relatively healthy and still moist and delicious. I subbed rolled oats for oat bran and the texture was great. Also put raisins instead of chocolate chips and chia seeds on top.
Two changes I would make for next time:
– a little too sweet- I would do less honey
– a little too bland (more like cupcakes than muffins, in that sense)- I would add more flavor with maple syrup or almond flour subs or even some shredded / mashed / chopped food stuffs- almond butter and chopped dates? 1-2 grated zucchinis?
