My family loved how succulent and delicious this chicken came out. Smells heavenly as it bakes. Simple ingredients. Fabulous supper!

Ingredients

Chicken

  • 5–6 chicken thighs

  • 1 teaspoon Bartenura Olive Oil

  • 1 clove garlic, crushed or 1 cube Gefen Frozen Garlic

  • 2 tablespoons sautéed onions (see note)

  • 1 teaspoon paprika (I use Moroccan paprika in oil)

Directions

Make the Chicken

1.

Preheat oven to 350 degrees Fahrenheit. Clean chicken pieces and pat dry. Place in a 9- x 13-inch baking pan.

2.

Mix olive oil, garlic, onions, paprika, brown sugar, salt and pepper in a small bowl. Smear all over chicken pieces on both sides.

3.

Pour the wine into the empty spice bowl and stir to gather up any bits of flavor left behind. Pour around the chicken in the pan.

4.

Cover and bake for an hour and a half. Uncover and bake for an additional half hour. Serve with oven roasted sweet potatoes and string beans.

Notes:

I always have sautéed onions (sautéed in a parve frying pan) in the freezer and therefore like adding it to as many dishes as possible. I find it really enhances the flavor. If you don’t want to patchkeh with it (although I highly recommend it!), add a dash of onion powder. Not the same flavor, though.

Yes I actually like it even better with white wine. A dry, crisp Sauvignon Blanc such as the Herzog Lineage would work great!

Hi Nechama. Do you want something sugar free, or just another sweet ingredient?

Do you leave the skin on? Or remove it?

Does the wine specifically have to be dry or semi dry? Can I use sweet wine in this recipe?

Dry/semi dry is preferred in cooking. If you don’t want to use wine, you can try adding chicken or veggie stock as a substitute but it won’t have the same deep and savory taste as the wine would.

Do you generally use boneless skinless thighs? What changes should I make for using them?

Yes, you definitely can. You’d have to multiply the recipe by around 10.
