Looking for a way to refresh your red cabbage salad? You’ll love this one!

Ingredients

Main ingredients

  • 1 head medium-sized red cabbage, or 8 ounces (225 grams) shredded red cabbage

  • 2 scallions, chopped

  • 3 stalks celery, finely sliced

  • 1 Granny Smith apple, finely sliced

  • 1 Red Delicious or Pink Lady apple, finely sliced

  • 4–5 Medjool dates, pitted and sliced into rings

  • 3 and 1/2 ounces (100 grams) slivered roasted almonds, for garnish

Dressing

  • 1/2 cup orange juice

  • 1/4 cup oil

  • salt, to taste

  • 1 teaspoon mustard

Directions

Prepare the Salad

1.

Put all dressing ingredients in a container and blend with a hand blender until smooth.

2.

To serve, place cabbage, celery, and scallion in a bowl. Add apple slices and dates.

3.

Immediately before serving, pour dressing over salad and garnish with almonds.
