Looking for a way to refresh your red cabbage salad? You’ll love this one!
1 head medium-sized red cabbage, or 8 ounces (225 grams) shredded red cabbage
2 scallions, chopped
3 stalks celery, finely sliced
1 Granny Smith apple, finely sliced
1 Red Delicious or Pink Lady apple, finely sliced
4–5 Medjool dates, pitted and sliced into rings
3 and 1/2 ounces (100 grams) slivered roasted almonds, for garnish
1/2 cup orange juice
1/4 cup oil
salt, to taste
1 teaspoon mustard
1/4 cup brown sugar
3 tablespoons Heaven & Earth Lemon Juice
Put all dressing ingredients in a container and blend with a hand blender until smooth.
To serve, place cabbage, celery, and scallion in a bowl. Add apple slices and dates.
Immediately before serving, pour dressing over salad and garnish with almonds.
