These jalapeños are a pleasant explosion of sweet and spicy flavors that will make your tastebuds happy!
2 sweet potatoes, cleaned and cubed
1/4 teaspoon Gefen Cinnamon
1 tablespoon Gefen Maple Syrup, plus more for brushing
6 jalapeño peppers
1/4–1/2 pound facon
Bring a pot of water to a boil. Add sweet potatoes and cook for 20–25 minutes or until tender.
Drain the sweet potatoes and mash. Add cinnamon and one tablespoon maple syrup. Set aside.
Spray a baking tray with oil spray. Remove stems from jalapeños and slice in half lengthwise. Remove seeds and white membrane from inside jalapeños (if you like it spicy, don’t remove all of the membrane). Place sliced jalapeños on baking tray.
Bake at 350 degrees Fahrenheit for 15–20 minutes. Remove from oven.
Fill jalapenos with sweet potato mixture.
Wrap one to two pieces of facon around each jalapeño. Brush facon generously with maple syrup.
Preheat oven to 400 degrees Fahrenheit.
Bake jalapeños for 20 minutes. Remove from oven and brush again with a little more maple syrup. Place back in oven and bake for another five to 10 minutes or until facon is crispy.
