- Egg2 tablespoons oil, fat or water
1 eggplant, peeled and cubed
1 onion, diced
1/2 teaspoon salt
1/8 teaspoon pepper
2 to 3 hard boiled eggs, chopped
Place oil, eggplant, onion and spices in heavy pot. Cover.
Simmer for 45 minutes. Mash with fork. Add chopped eggs.
Serve warm or chilled.
