Chocolate Mousse is one of those basic recipes that we all need to have up our sleeves. When creating a great recipe to share in this book, I listened to my readers’ frequent request: They want an egg-free chocolate mousse. Well, here you go — no eggs, but still delicious!
1 cup heavy whipping cream or Kineret Non-Dairy Whipped Topping
8 ounces semisweet chocolate, melted and cooled
1 teaspoon instant coffee dissolved in 1 tablespoon boiling water
2 tablespoons amaretto or coffee liqueur
1 cup powdered sugar
whipped cream
chocolate shavings
In the bowl of an electric mixer fitted with the whisk attachment, on high speed, beat whipping cream until stiff peaks form. Set aside.
In a small bowl, whisk together melted chocolate, coffee, and liqueur until smooth. Add powdered sugar; stir until combined.
Pour chocolate mixture into whipped cream. Beat lightly until mostly combined, then switch to a rubber spatula to fully incorporate.
Spoon or pipe mousse into small cups. If desired, top with additional whipped cream and chocolate shavings.

We recommend Kineret Non-Dairy Whipped Topping, it is the kind that comes in a mini milk container and you hand whip the cream.
