During this Coronavirus pandemic, while we are all locked in our homes and certain foods or supplies can be scarce, I wanted to offer you an easy recipe that can be made with simple pantry ingredients.  Easy Italian Meatballs is the answer.  Enjoy in good health!   For this recipe, I highly recommend using Italian flavored breadcrumbs.  You can use plain bread crumbs, but the meatballs won’t have that herbaceous flavor inside.  If you are using plain breadcrumbs, add some basil and oregano to your meat mixture to boost the flavor of the meatballs themselves.  The sauce will take over the rest.

  • 2 and 1/2 pounds ground beef

  • 2 eggs

  • 1 teaspoon Haddar Kosher Salt

  • 1/2 teaspoon black pepper

Directions

Prepare the Meatballs

1.

Use fingers to combine ground beef, eggs, kosher salt, black pepper and bread crumbs in a large bowl until well mixed.

In a large pot, pour in one jar of marinara.

Scoop approximately two tablespoons of meat mixture into your palm and using both palms roll into a round ball. Place the ball into the pan on top of the marinara. Repeat until all of the meat mixture is rolled up and in the sauce.

4.

Pour the second jar of marinara over all of the meatballs. Cover the pot with a lid and turn heat on medium. Cook for 30 minutes or until pressing on a meatball, the juices run clear. There is no need to stir or disturb. Just walk away for 30 minutes.

5.

Serve over cooked pasta or between layers of crusty bread.

Notes:

Easy Italian Meatballs can be refrigerated for several days or frozen and reheated on the stove or in the oven, making them ideal for weekly meal prep.

Ground Turkey & Chicken Can I use ground chicken &/or ground turkey?

You can use ground chicken & or turkey, it will be lighter in taste than ground beef, but it shouldn’t be a problem.

You can toss in a bit of dried basil and oregano to boost the Italian flavor in the meat.

If I don’t have Italian seasoned breadcrumbs & I use regular seasoned crumbs could I add something to the mixture?

You can use regular breadcrumbs and just use some Italian spice such as oregano etc.
